(Feature) Our ingredients

From the morning market to the evening shelf

The fruit is chosen at the market that morning.
Tart shells are baked the day before and rested overnight.
We don't bake ahead,
so the shelves are sometimes empty by evening.

  • (01)

    Morning fruit

Picked at the market each morning and on a tart the same day. We don't know what it'll be until the day before.

  • (02)

    Kumamoto chestnuts

Simmered with the sweetness adjusted to each year's harvest. The inner skin stays on, leaving a hint of bitterness.

  • (03)

    Amanatsu peel

Simmered and folded into our pound cake. The aroma settles in nicely by the next day.

  • (04)

    Wasanbon sugar

A fine Japanese sugar we use in one of our sablés. Its sweetness melts away on the tongue.

  • (05)

    Honey

Just a little in our madeleines. Honey keeps them moist until the next day.

  • (06)

    70% cacao

For our gâteau au chocolat. The batter slumps in the heat, so we bake it only from autumn to spring.

(FAQ) Common questions

All You Need
to Know

Can you set items aside for me?

Yes. Call us with the item and your name. We hold it until 30 minutes before closing, after which it goes back on the shelf.

Do you ship?

Only baked goods and gift boxes can be shipped by courier. Fresh tarts would fall apart, so we don't ship them. Shipping varies by region.

Do you take credit cards?

Yes, and QR code payments too — even for purchases under ¥1,000.

Is there parking?

There are 2 spaces in front of the shop. If they're full, use the coin parking about 30 m away — we'll refund 30 minutes of the fee.

Can you accommodate allergies?

Wheat, egg, dairy and walnuts are handled in the same kitchen, so we can't fully separate them. Sadly, we can't recommend our sweets to anyone with a severe allergy.
