The fruit is chosen at the morning market
What goes on our fruit tart isn't decided until the day before. We asked the owner about the journey from picking fruit at the morning market to the shelf.

6 a.m., at the market's produce stalls
The fruit for our tarts is chosen at the morning market. What was good last week isn't always good this week. I look, I touch, I taste one — and then I decide.
That's why we don't know what will be on the tart until the day before. If you call and ask what tomorrow's tart will be, we may not be able to tell you.
“Don't you have the one from last week?” — that's the question I feel worst about.
The shell is baked the day before
Tart shells are baked the day before and rested overnight. A settled shell soaks up less juice from the fruit than one fresh from the oven.
- 6:00 — Choose fruit at the market
- 8:00 — Cut the fruit and cook the cream
- 10:00 — Open. The first tarts go out
- 14:00 — Finish the afternoon batch
If you really want one
We don't bake ahead, so things can sell out by evening. If there's something you really want, give us a call — we'll hold it until 30 minutes before closing.
