Taking a fresh tart home: the 2-hour rule
A fresh tart keeps for about 2 hours with an ice pack. The owner answers a question we hear all summer: “How long will it last?”

What happens after 2 hours
A fresh tart is made of chilled cream and fruit. Even with an ice pack, after 2 hours the cream softens and the fruit starts to weep. It's still edible, but it's no longer at its best.
In summer, a car gets hotter inside than you'd think. On the way home, please keep it on an air-conditioned seat.
For people coming from far away, I sometimes suggest baked goods instead. I don't want anyone to carry a fresh tart all that way and be disappointed.
If you're going far
- Home within 2 hours — a fresh tart (we'll add an ice pack)
- Farther than that — baked goods or the sablé assortment
- Sending by courier — baked goods and gift boxes only
The sablé assortment keeps 14 days from baking. They're made thick enough not to break, so they travel well.
